Another week has flown by! I hope it has been a nice week for you all! 🙂 We have been busy with lots of activities this week as it is the last week before school holidays here. Everything is busy busy during holidays so we try to get out while the big kids are at school.
I have been eating hummus like crazy, just been craving it to no end. My sister has a thermomix, which if you haven’t heard of them, they are like a Rolls Royce blender/cooker/does everything machine. Anyway, they make hummus like a pro, so I always send my ingredients to her house and let her/ beg her to make me some hummus!
Chickpeas are easy to use, you can boil them, throw them in the slow cooker, a stir fry, on a salad, mush them into burgers or toast them. Versatile and tasty! They are also extremely healthy!
They are high in fibre, which is something most Western Diets are lacking in!
They have been linked to improved control of blood sugar and insulin secretion. (Source)
They are a source of iron, folate, manganese, protein, copper, phosphorus, molybdenum, tryptophan. (Source)
They can help reduce LDL (bad) cholesterol levels. (Source)
So on that note, I thought I’d share my hummus recipe! You don’t need a thermomix.
1 Can of Chickpeas
2 Tbs of Olive Oil
2 Tbs Tahini
Juice of one lemon
Blend it all together!
