I hope you are all having a wonderful week! I thought I would share a little recipe with you. I don’t always make the most beautiful food or take the best photographs and by don’t always I mean never. I do like to keep things simple and use whole foods most of the time. So here we go!!!
In most of the blog world it is autumn or fall, but down here it is most definitely spring. So no pumpkins or squash in the recipe just lots of bananas. Bananas are cheap, plentiful and ripening really fast in the lovely spring heat we’ve been having. So this recipe is my answer for those days when you have lots of really ripe bananas and don’t feel like turning the oven on.
Here is what you need:
• 4 ripe bananas
• 1/4 cup of coconut milk
• Pinch (or several) of cinnamon
• Tablespoon of your favourite honey
• Dash of vanilla essence (optional)
Mix it all up in a blender for a smooth consistency or by hand if you enjoy a more chunky texture with larger pieces of banana.
Pour it in a freezer friendly bowl and freeze!
Take it out of the freezer about 15 minutes before you are ready to eat.
It is not the best looking frosty I’ve ever had and let’s be honest nothing beats ice cream. But it is rather tasty and it (sometimes) takes the edge off my sweet tooth.
